Pizza is pretty versatile and easy. We bought some fresh goat cheese at the Winter Farmer’s market the other weekend and I just had to use it. We also bought a HUGE yellow onion so I wanted to use it and what else to do then caramelize it! I love the combination of sweet and smokey onions with the sharp tang of goat cheese. I bought gluten-free pizza dough mix from Bob’s Red Mill. It was a strange consistency, you spread it with wet hands on a cookie sheet instead of pull and stretch it into a pizza shape. But it was good, not doughy, more of a flat bread quality.

This pizza is pretty easy to make. Just follow the instructions for the pizza dough, use the marinara recipe already on the website as pizza sauce, caramelize the onions, add them and sprinkle the goat cheese on top. Bake for 10-15 minutes.
