We are still in the middle of moving. I can’t even describe how perfect James has been helping me move my things in and supplying me with chocolate when he finds me frozen in the middle of all the unpacked boxes. He also made me melt when he in preparation for moving my cat in bought all natural, organic cat treats for him so he feels welcome. Anyway, enough gushing. My point is in all the craziness I haven’t gotten a chance to type up any new recipes so here is one I have made in the past. Let me know if you try it!

This is another dish I made for the family I nanny for. Its from one of my favorite blogs Damn Delcious. It was my first time using chicken thighs and I was happy that it came out well, the family raved about it. So I’d say it was a success!

This recipe is a great mix of sweet and spicy with the brown sugar and garlic. But because of the brown sugar and honey it does have a higher sugar content, so that means the perfect Holiday treat right?!

This recipe also requires an oven proof skillet, just a heads up!

Prep Time: 20 Minutes

Yield: 4 servings

Ingredients:

4 bone-in, skin-on chicken thighs

Kosher salt and freshly ground black pepper, to taste

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1/4 cup light brown sugar, packed

1 tablespoon honey

1/2 teaspoon dried oregano

1/4 teaspoon dried thyme

1/4 teaspoon dried basil

Directions:

Preheat oven to 400 degrees F.

Lightly season chicken thighs with salt and pepper. This is necessary since the crispy outsides of the thighs are the best part.

Melt 2 tablespoons of the butter in a large oven-proof skillet over medium high heat. Add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside.

Melt remaining tablespoon butter in the skillet. Add garlic, and cook, stirring frequently, until fragrant, careful not to burn it! About 1-2 minutes. Remove from heat.

Stir in brown sugar, honey, oregano, thyme and basil until well combined. Return chicken to the skillet, spoon some of the sauce over the chicken.

Place in the oven and roast for about 25-30 minutes until cooked completely through. The internal temperature should be 175 degrees.
