I love the Skinnytaste cookbook and I was excited to find a Meatless Monday section. Unfortunately most of the section had meals with lots of pasta. I’m never going to complain about pasta, I love pasta, but if looking to improve your diet and do a “heavy food” detox eating pasta laden dishes is not the way to go.

One of, if not THE, most frequent mistakes I make when cooking a meal from a cookbook or online recipe is checking the yield. I certainly should have checked the yield for this recipe. We had LOTS of leftovers. Thankfully we were able to pawn some off on relatives. They were VERY filling and VERY tasty. The leftovers also fared pretty well.

Butternut Squash and Spinach Lasagna Rolls

The only change I made was to use thick slices of mozzarella instead of shreds over the top. I like the fresh made mozzarella over the bagged shredded.
