Sunday mornings are tough for me. Usually I’m tired from all the work we did Saturday and usually we don’t get to sleep in. Like this Sunday we had a quote for the back splash at 9, so we had to be up and at least presentable. This Sunday I wanted to make something a bit different but I wanted to use everything we had gotten from the Farmer’s Market. I’m tired of using non local things and I’m antsy to start using things from the garden. So I made up this super simple recipe using all ingredients from the local market…yay! Hopefully someday I can make this using ingredients from our garden only.

Spinach Fritatta

Ingredients:

2 cups local large leaf spinach

1 large clove garlic – peeled and minced

1 tablespoon unsalted butter

1 tablespoon extra virgin olive oil (if you have garlic infused, use that!)

4 eggs

1 yellow onion – sliced

1/4 cup feta cheese or herbed cheese cut into chunks

*You will need a cast iron 8-9inch pan*

Directions:

Preheat oven to 350.

Head the cast iron pan and add the butter, let melt and add the onions. Caramelize.

Once the onions are caramelized remove from pan and set aside on small plate.

Add the olive oil to the pan, let heat a minute and add the spinach and garlic, if it all doesn’t fit that’s fine, saute it in two different batches.

Turn off the heat, stir in the caramelized onions and crack the eggs into a small bowl, whisk and pour into the pan.

CAREFULLY lower the pan into the oven. Bake for 10 minutes or until set. Add the cheese on top, let melt in the oven for around 3 minutes.

Take it out, let cool for a few minutes and then serve! Enjoy!
