So while we’re away here is a guest post from my Stepmom Theresa. She makes this amazing salad dressing that I find myself thinking about every now and again. She gave me some at Christmas and I finally weaseled the recipe out of her, so I thought I would share. I still have a small amount left and I’ve been parceling it out in small proportions (James has been barred from it).

I made an incredible salad with it a couple weeks ago. So here is the recipe for the dressing and salad.

Theresa’s Addictive Salad Dressing:

1/2 Shallot minced

2 Garlic cloves pressed

1 Tbs white wine vinegar

1 Tbs Balsamic vinegar

2 Tbs Low Sodium Soy sauce

2 Tbs real maple syrup

1 tsp dijon mustard

1/2 Cup canola oil

Put everything but the oil in the blender. Blend on low or medium and pour the oil through the hole in the top of the blender.

Store in an airtight container and refrigerate. It will separate a bit so before you use it give it a shake or stir.

Seriously Addictive Salad:

Cubed Tofu (Recipe Here)

Dried Apple Chips (Recipe Here)

Craisins

Red Onion slices

Spinach

Roasted Pumpkin Seeds (Recipe Here)

The amounts vary according to how many people you are making the salad for and how much you like each ingredient. Like crunchier salads? Add more pumpkin seeds. Eating it as a main dish? Add more tofu. Like sweeter salads? Add more apple chips and craisins. REALLY love onions? Add more onions…you get the idea.

I suggest adding the dressing right before you serve it as it might make the apple chips and spinach a bit soggy.
