For the weekend of September 19th Jim and I spent two nights at Knickerbocker Lake Cottages in Boothbay Maine.

It was incredible, a little slice of heaven. The cottage was a perfect size for two people and even had a tiny kitchen and grill. The best part about the cottage was the huge front porch that looked out at the lake. It was sheltered by trees and was the perfect place for a cup of tea and many games of Rummy 500.

We had dinner together in Boothbay our first night, our second night we wanted to stay in. The kitchen was super tiny and we didn’t want to buy any more than we needed, which actually makes cooking anything too creative a bit tougher. We finally came up with the idea of grilling fresh vegetables and already marinated Pork. We went to the Hannafords near by and picked up everything. The pork was the perfect amount for two people and I might have gone a bit too veggie crazy by getting three peppers, red yellow and orange, a small yellow squash and a small bunch of asparagus. Photo Sep 20, 6 16 18 PMThe only thing we did to the vegetables is toss them in olive oil before we put them on the adorably small grill. If you’ve never had grilled fresh veggies in olive oil then I feel deep, deep sympathy for you. I love veggies in general but there’s something that happens to them on the grill that helps retain the perfect crunch and infuse a smoky warmth. It was the perfect meal. We also purchased a small amount of goat cheese. The first course was the grilled peppers and half a squash each with crumbled goat cheese on top. The squash was tender and incredibly juicy. We had the asparagus with the porkPhoto Sep 20, 6 44 53 PM, they had the perfect crunch and crispy heads that I love. Overall it was the best meal that weekend, including the fresh lobster in Brunswick and Lobster Rolls in Boothbay. It’s one of those meals I still daydream about.

Notes from the Farmer

When on vacation, fresh and simple is the key. Grilling is a great way to go, especially with lots of fresh vegetables from the area. The keys to a good vacation are to not think too much about it, relax, and enjoy. So no notes or recommendations here, other than next time you’re on vacation, keep it simple.
